At the Rössli, the tried and tested is combined with the newly created in a creative way. The dilapidated building was renovated with loving attention to detail and completed with a new extension. Dusty chairs were removed from the mop of hair, restored and supplemented with modern chairs. Old slate tables, which were already witness to lively regulars' table discussions in the Rössli back then, are being refreshed and combined with slate tables from the here and now. This exciting combination of the two worlds does not stop at the dining table.
Asparagus in spring and walnuts in autumn - this kind of seasonality is well known. In "Rössli hü", however, the focus is on in-house food preservation. The products made in the restaurant can be bought on site in the pantry.
